Garlic Mashed Potatoes Recipe
Lumpy garlic mashed potatos are excellent for the meat and pototoes family. I love them, but have had to cut back on them thanks to the Atkins diet!
- Meal Type: Sidedish
- Ethnicity: American
- Holiday Category: N/A
- Preparation Time: 15-30 minutes
Ingredients
- 5 medium potatoes
- 5 cloves of garlic, minced
- 2 T olive oil
- 1/2 C sour cream
- 1/2 C mayonaisse
Directions
- Peeled and cut potatoes into 1/2 inch cubes. Place in large pot of water. Heat to a boil and cook for about 10 minutes or until tender.
- Saute garlic in olive oil until tender while the potatoes are cooking
- When potatoes are tender, drain and return them to the pot. Add mayonaisse and sour cream, and mash potatoes with a hand masher (you can use an electic mixer if you prefer, but I prefer lumpy hand mashed potatoes)
- Mix in sauteed garlic mixture and serve. You are going to get around 1 serving per potato
