Garlic Mashed Potatoes Recipe

Lumpy garlic mashed potatos are excellent for the meat and pototoes family. I love them, but have had to cut back on them thanks to the Atkins diet!

Ingredients

  • 5 medium potatoes
  • 5 cloves of garlic, minced
  • 2 T olive oil
  • 1/2 C sour cream
  • 1/2 C mayonaisse

Directions

  1. Peeled and cut potatoes into 1/2 inch cubes. Place in large pot of water. Heat to a boil and cook for about 10 minutes or until tender.
  2. Saute garlic in olive oil until tender while the potatoes are cooking
  3. When potatoes are tender, drain and return them to the pot. Add mayonaisse and sour cream, and mash potatoes with a hand masher (you can use an electic mixer if you prefer, but I prefer lumpy hand mashed potatoes)
  4. Mix in sauteed garlic mixture and serve. You are going to get around 1 serving per potato
