Pasta Salad with Chicken and Artichokes Recipe

Simple to make pasta salad. With the chicken, it can serve as a full lunch.

Ingredients

  • 1 lb Pasta shells
  • 1 1/2 c Mayonnaise
  • 3 tb Chopped parsley
  • 3 c Diced cooked chicken
  • 1 dash of tabasco
  • 2 tb Oil
  • 3 tb Lemon juice
  • 1 ts Dried parsley
  • 6 oz Jar artichokes chopped and drained
  • Toasted almonds (for garnish)

Directions

  1. Cook pasta in large pot of boiling, salted water until tender, but firm, 8 to 12 minutes, stirring often
  2. Drain well and rinse with cold water
  3. Shake out excess water and toss pasta with oil
  4. Combine mayonnaise, lemon juice, parsley and basil
  5. Place pasta in large bowl
  6. Add mayonnaise mixture, chicken, artichokes and tabasco
  7. Toss well
  8. Garnish with almonds
