Potato Cakes Recipe

A perfect potato cake recipe for Sunday brunch that the kids will love

Ingredients

  • 2 c Mashed potatoes
  • 2 tb Chopped onion
  • 1/8 ts Salt
  • 1 ts Oil
  • 1 Egg white, slightly beaten
  • 2 tb All purpose flour
  • 1 Pepper to taste

Directions

  1. In a medium size bowl, combine potatoes, egg white, onion, flour, salt and pepper
  2. Meanwhile, heat oil in a large skillet over medium high heat
  3. When hot, put about 2 tablespoons potato mixture for each cake into skillet
  4. Cook until well browned, then turn with a spatula and cook other side until brown
