Scampi-Style Chicken Thighs Recipe

A pretty decent chicken recipe. We find that our kids like the thighs more than chicken breasts most of the time.

Ingredients

  • 4 Skinned chicken thighs, with excess fat trimmed (approx 6 oz each)
  • 2 tb Minced fresh parsley
  • 1 tb Margarine, melted
  • 1 Clove garlic, minced
  • 1/8 ts Paprika
  • 1/3 c Fresh squeezed lemon juice
  • 2 tb Dry white wine (or chablis)
  • 1 tb Olive oil
  • 1/8 ts Onion powder

Directions

  1. Rinse chicken with cold water, pat dry, and place in a shallow container.
  2. Pour lemon juice over chicken, and let stand 20 minutes
  3. Combine parsley and rest of ingredients in a small bowl; stir well
  4. Spray rack of a broiler pan with cooking spray
  5. Remove chicken from lemon juice, discarding lemon juiice
  6. Arrange chicken on rack, and brush with parsley mixture
  7. Broil 6" from heating element, 4 minutes on each side or till tender.Transfer chicken to a serving platter
  8. Garnish with lemon wedges and parsley, if desired
