Vegetable Frittata Recipe

Great vegetable sidedish for your table

Ingredients

  • 1/3 c Chopped onion
  • 1 tb Butter
  • 1 1/2 c Scrubbed, chopped zucchini
  • 1/2 ts Salt
  • 6 Large eggs, beaten
  • 2/3 c Chopped green pepper
  • 4 tb Olive oil
  • 2 Minced garlic cloves
  • 1/4 c Tomato, peeled, seeded and chopped

Directions

  1. In skillet, cook onions and green pepper in butter and 2 tablespoons olive oil, stirring, 5 minutes
  2. Add zucchini, cook covered 4 minutes
  3. Add garlic, salt and tomato, cook stirring, 5 minutes
  4. Transfer to bowl and cool
  5. Add eggs
  6. Over medium heat, heat 2 tablespoons olive oil in 10 inch ovenproof skillet
  7. Add egg mixture, cook 3-5 minutes till underside is set
  8. Bake in preheated 400F oven for 1 to 2 minutes until puffed and golden
  9. Cut into wedges and serve
