Cauliflower Dish Recipe

A wonderful side dish at our table. This cauliflower recipe can be spiced up a little if you like with chiles that are more than mild.

Ingredients

  • 3 c Cauliflower
  • 1 tb All purpose flour
  • 1/4 ts Salt
  • 3/4 c Skim milk
  • 2 tb Chopped green chilies
  • 1/2 ts Low fat margarine
  • 1/8 ts Red (cayenne) pepper
  • 1/8 ts Pepper
  • 1/2 c Shredded low fat cheddar ch
  • 1/4 c Fresh bread crumbs

Directions

  1. Preheat oven to 350F
  2. Steam cauliflower just until tender; drain
  3. Melt margarine in a medium size saucepan over medium heat
  4. Combine flour, red pepper, salt, pepper, and milk in a mixing bowl and whisk until blended
  5. Slowly add to margarine in saucepan, stirring constantly until smooth
  6. Add cheese and continue stirring until smooth and slightly thickened
  7. Stir in chilies
  8. Arrange cauliflower in a 2 quart baking dish; pour sauce over cauliflower, then sprinkle with bread crumbs
  9. Bake 10 to 15 min or until bubbling
