Rigatoni Ala Vodka Recipe

A favorite of mine. This is a full family size version. We use a low carb pasta in this recipe to make it fit reasonably well to an Atkins diet maintenance level of carbs

Ingredients

  • 2 lb rigatoni
  • 24 oz canned tomato sauce (plain)
  • 2 T olive oil
  • 2 cloves fresh garlic - minced
  • 1/2 t cracked red pepper
  • 1 T salt
  • 1/2 t black pepper
  • 1 t dried basil
  • 1/2 quart heavy cream
  • 1−1/2 oz vodka
  • 1 oz grated romano cheese
  • 1 oz bacon bits
  • 1/2 oz italian parsley, chopped

Directions

  1. In a medium sauce pan, heat oil until hot. Add garlic and saute until golden brown
  2. Add tomato sauce, salt, red pepper, black pepper, and basil. Cook over medium heat, stirring occasionally, until thoroughly heated
  3. Add heavy cream and vodka. Stir to mix and cook for a few minutes.
  4. Boil rigatoni according to package instructions (do not overcook)
  5. In a mixing bowl, combine drained pasta with cream sauce. Mix thoroughly
  6. Transfer to a serving bowl and sprinkle with grated cheese, bacon, and parsley
  7. Serve immediately for best results!
