Grilled Chicken Breasts in Raspberry Vinegar Marinade Recipe

This grilled chicken breast recipe has a wonderful taste

Ingredients

  • 4 ea Chicken breasts halves
  • 1/4 c Chicken stock
  • 1 tb Lemon juice
  • 1 ea Shallot, finely chopped
  • Black pepper
  • 1/2 c Raspberry or wine vinegar
  • 2 tb Olive oil
  • 1 ts Grated lemon peel
  • 1/2 ts Dried tarragon leaves

Directions

  1. Remove excess fat from chicken breasts; place them in sealable plastic bag or non-aluminum bowl
  2. Combine remaining ingredients; pour evenly over chicken breasts
  3. Seal bag or cover bowl; marinate in refrigerator 4 hours or overnight, turning occasionally
  4. Remove chicken from marinade and arrange in one layer in large, shallow microwaveable dish
  5. Pierce skin in several places with sharp knife
  6. Cover with waxed papper
  7. Microwave at high 4 minutes per pound
  8. Turn over and rearrange at the halfway point of microwaving
  9. Transfer immediately to preheated grill, skin side up, over low heat
  10. Turn often for even grilling
  11. Cook until tender and juices run clear when chicken is pierced with fork, usually 10 to 20 minutes.
