Spicy Cabbage Soup Recipe

This healthy and spicy soup is a great way to get your recommended daily servings of vegetables. The recipe is a spin-off of the famous "Cabbage Soup Diet" recipe. It is satisfying and delicious.

Ingredients

  • 3 Green Onions, sliced
  • 1 Cup Diced Bell Pepper, any color(s)
  • 1 14 oz. Can No Salt Added Diced Tomatoes, undrained
  • 1 10 oz. Can Rotel Diced Tomatoes with Mild Green Chiles, undrained
  • 1 Cup Carrots, sliced or shredded
  • 1 Cup Mushrooms
  • 1 Small Head Green Cabbage, chopped
  • 1 Packet Lipton Onion Soup Mix
  • 3 Cups Reduced Sodium V8 Juice
  • 1 Regular Can Reduced Sodium Chicken Broth
  • 1 Regular Can Kidney Beans, rinsed and drained
  • 1 Small Zucchini Squash, chopped
  • 1 Small Yellow Squash, chopped
  • ½ Onion, diced
  • Water to fill pot
  • Dash Black Pepper
  • Dash Cayenne Pepper

Directions

  1. Spray bottom of extra large (about 5 quarts) saucepan with cooking spray.
  2. Add onions, green onions, bell peppers and carrots and cook over medium heat, stirring frequently, for 4-5 minutes.
  3. Add remaining ingredients, except water and soup mix, and mix well.
  4. Cover mixture with water to fill pot.
  5. Bring pot to boil.
  6. Stir in soup mix.
  7. Reduce heat and simmer for 2 hours.
