Spicy Cabbage Soup Recipe
This healthy and spicy soup is a great way to get your recommended daily servings of vegetables. The recipe is a spin-off of the famous "Cabbage Soup Diet" recipe. It is satisfying and delicious.

Ingredients
- 3 Green Onions, sliced
- 1 Cup Diced Bell Pepper, any color(s)
- 1 14 oz. Can No Salt Added Diced Tomatoes, undrained
- 1 10 oz. Can Rotel Diced Tomatoes with Mild Green Chiles, undrained
- 1 Cup Carrots, sliced or shredded
- 1 Cup Mushrooms
- 1 Small Head Green Cabbage, chopped
- 1 Packet Lipton Onion Soup Mix
- 3 Cups Reduced Sodium V8 Juice
- 1 Regular Can Reduced Sodium Chicken Broth
- 1 Regular Can Kidney Beans, rinsed and drained
- 1 Small Zucchini Squash, chopped
- 1 Small Yellow Squash, chopped
- ½ Onion, diced
- Water to fill pot
- Dash Black Pepper
- Dash Cayenne Pepper

Directions
- Spray bottom of extra large (about 5 quarts) saucepan with cooking spray.
- Add onions, green onions, bell peppers and carrots and cook over medium heat, stirring frequently, for 4-5 minutes.
- Add remaining ingredients, except water and soup mix, and mix well.
- Cover mixture with water to fill pot.
- Bring pot to boil.
- Stir in soup mix.
- Reduce heat and simmer for 2 hours.
