Zucchini Quiche Recipe

Wonderful sounding quiche recipe

Ingredients

  • Crust:
  • l l/2 cups cooked rice
  • l/2 cup cottage cheese
  • l egg white (save yolk for filling)
  • Filling:
  • 4 cups thinly sliced zucchini
  • l onion, thinly sliced
  • 3 T oleo
  • 2 eggs (plus leftover yolk)
  • 2 tsp dried parsley flakes
  • l/2 tsp salt/garlic powder/dried basil and oregano
  • l/4 tsp black pepper
  • 2 cups shredded mozzarella cheese
  • 2 tsp prepared mustard

Directions

  1. Crust:
  2. Mix together rice, cottage cheese and egg white then put in 9 inch pie pan and bake 8 minutes at 400 degrees.
  3. Filling:
  4. Saute zucchini and onion in oleo until tender.
  5. Mix rest of ingredients, except mustard.
  6. After baking crust for 8 minutes, spread with mustard.
  7. Add filling and bake 30 to 40 minutes at 400 degrees
