Quick Brunswick Stew Recipe

A hearty and healthy stew that's perfect for warming up on cold nights. Serve with crackers or crusty bread. Yummy!

Ingredients

  • 1 10 oz. can chicken, drained and cut up
  • 1 14.5 oz. can stewed tomatoes, undrained and cut up
  • 1 10 oz. can condensed tomato soup
  • 1 14.5 oz. can whole kernel corn, undrained
  • 1 small can lima beans, drained
  • 1 14.5 oz. diced potatoes, drained
  • 1 small to medium onion, sliced in wedges
  • 3 Tbsp. worcestershire sauce
  • 1/2 tsp. cayenne pepper
  • 2 Tbsp. hot sauce
  • 2 Tbsp. cider vinegar
  • 2 Tbsp. barbeque sauce
  • 1/2 cup water or chicken broth
  • 1 Tbsp. vegetable oil
  • Salt and pepper to taste

Directions

  1. Heat 1 Tbsp. oil in large saucepan and add onions.
  2. Sautee onions until tender, but not browned.
  3. Add remaining ingredients, except for chicken, cover and simmer 10 minutes.
  4. Add chicken, cover and simmer an additional 10 minutes.
  5. Makes 6-8 servings.
