Apple Oat Bran Muffins Recipe

Light and delicious and Oh, so good for you. Batter keeps in refrigerator for up to 3 days

Ingredients

  • 1 1/4 cups whole wheat flour
  • 1 cup oat bran
  • 1/3 cup brown sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt, nutmeg and cinnamon
  • 1 cup buttermilk
  • 2 tablespoons vegetable oil
  • 1 egg or two egg whites
  • 2/3 cup grated apple (do not peel)
  • nuts and raisins are optional

Directions

  1. Mix dry ingredients in a bowl
  2. Mix wet ingredients in another bowl
  3. Mix the two together then fold in apple
  4. Spoon into muffin cups and bake 375 degrees about 20 minutes or until golden brown.
