Microwave Scalloped Potatoes Recipe
Quck and easy, no need to fire up the hot oven in the summertime to enjoy these cheesy goodies

Ingredients
- 3 T oleo or butter
- 3 T all purpose flour
- salt and pepper to taste
- 3 cups milk
- l l/4 cups shredded cheddar cheese
- 4 medium potatoes, sliced thin
- l/4 cup chopped onion
Directions
- Melt oleo in saucepan, add flour, salt and pepper. Bring to boil, add cheese, stir til melted. Pour over onion and potatoes in pam sprayed 2 quart microwave safe dish with lid. Cover and microwave on high 30 to 40 minutes, or until potatoes are tender.
