Banana Pineapple Muffins for Two Recipe

Light and tasty, filled with fruits and whole grain, good for you

Ingredients

  • l/4 cup oleo melted
  • l/4 cup sugar
  • l/2 large egg, or one small
  • l/4 cup crushed pineapple (drained)
  • l/2 cup mashed banana
  • l/2 tsp vanilla extract
  • l/2 cup all purpose flour
  • l/4 cup whole wheat flour
  • l/2 tsp baking soda
  • l/4 tsp baking powder
  • l/4 tsp each nutmeg and cinnamon

Directions

  1. Mix first six ingredients in bowl.
  2. Mix dry ingredients in another bowl.
  3. Add the wet ingredients to the dry. Stir to just mix, do no overmix. Fill nearly full in pam sprayed muffin tin or paper lined muffin cups. Bake 375 degrees about 20 minutes, or until done. makes 6 or 7. I sometimes toss in some raisins too.
