Apricot Mini Loaves Recipe
Small loaves of moist tender tasty breakfast bread. Easy and delicious. Perfect for two people.

Ingredients
- 1 egg lightly beaten
- 6 Tablespoons milk
- 5 Tablespoons melted oleo or butter
- 1 Tablespoon honey
- 1/2 Teaspoon vanilla
- 1/2 Teaspon cinnamon (optional)
- 1 cup pancake mix, any brand
- l/4 cup each, dried apricots, raisins and chopped pecans
Directions
- Mix wet ingredients, mix in pancake mix. Fold in fruit and nuts. Put in two greased or pam sprayed mini loaf pans (4x6 inches) Bake 350 degrees about 30 minutes or until golden brown.
- Ice with sugar and milk icing if you like.
