Rice Pudding Recipe

This is a pretty easy to make rice pudding recipes. Lots of good healthy ingredients in this recipe.

Ingredients

  • 4 C lowfat milk
  • 1 C brown rice
  • 2-3 cinnamon sticks
  • pinch of salt
  • 1/4 C sugar
  • 1 t vanilla
  • pinch of nutmeg
  • 1/4 C nonfat vanilla yogurt
  • 2 apples, peeled and diced
  • 1 pear, peeled and diced
  • Ground cinnamon (optional)

Directions

  1. In heavy medium saucepan, brink milk, rice, cinnamon sticks and salt to simmer. Reduce heat to low, cover and simmer, stirring occasionally (about 1 hour)
  2. Add sugar, vanilla and nutmeg. Blend over low heat until thick (about 15 minutes)
  3. Remove cinnamon sticks
  4. Stir yogurt and 3/4 of fruit into rice pudding.
  5. Transfer to large bowl, top with remaining fruit and sprinkle with ground cinnamon if desired.
  6. Serve warm
