Meatloaf Muffins Recipe

Not what you might think of when thinking of a meatloaf recipe. These meatloaf specialties, are individual meatloaves baked in muffin tins.

Ingredients

• l T olive oil
• l cup finely chopped onion
• l/2 cup shredded carrot
• 2 minced cloves garlic (optional)
• l tsp dried oregano
• l cup ketchup
• l l/2 lb lean ground beef
• l cup cracker crumbs
• 2 T prepared mustard
• l tsp worcestershire sauce
• salt and pepper to taste
• 2 eggs

Directions

1. Saute onion, carrot and garlic in olive oil.
2. Mix with rest of ingredients.
3. Put into 12 muffin cups
4. Bake 350 degrees about 30 minutes.
5. Leftovers freeze well for a meal later.
