Flounder Amandine Recipe

Ingredients
- 1/2 cup sliced almonds
- 1/2 cup (8 tablespoons) butter or margarine
- 2 medium onions, very thinly sliced
- 1 pound fresh or frozen flounder or sole fillets, thawed if frozen
- 3/4 cup mayonnaise
- 1 tablespoon chopped fresh parsley Juice of 1 lemon
- 1/4 cup (1 ounce) shreaded parmesan cheese
Directions
- Preheat oven to 350 degrees Fer. ON baking sheet, spread almonds in single layer. Bake 7-10 minutes or until lightly toasted, stirring frequently; set aside. Melt butter in shallow 1-quart baking dish in oven. Place onions in dish; top with fish. In small bowl, combine mayonnaise, parsley and lemon juice; spread evenly over fish. Sprinkle with cheese. Bake 15-20 minutes or until fish flakes easily when tested with fork. Sprinkle toasted almonds on top before serving
