Armenian style baked fish recipe

Ingredients

  • 3 lbs. whitefish-anywhite fleshed bland fish may be substituted
  • 3 fresh tomatoes or one small canned tomatoes
  • 1 cloves garlic mashed
  • 1 tbsp. flour
  • 1 c. water
  • 4 tbsp. minced parsley
  • 1/2 cup olive oil
  • juice of 1 lemon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. fillet and rinse fish.
  2. Spread the fillets skin side down in a buttered baking pan.
  3. Cover fish with tomatoes garlic and the flour mixed with water.
  4. Spread with parsley.
  5. Seasoned with salt and pepper.
  6. Pour oil and lemon juice all around fish.
  7. Bake at 325F 20 to 40 minutes depending on the thickness of the fish.
  8. Spoon pan juices over the fish several times while baking.
  9. May be served hot or cold.
  10. Garnish with sliced lemon. Serves six.
