Italian Sausage and Lentil Stew Recipe

Ingredients
- 1 lb. italian sweet sausage, cut into chunks
- 1 large onion chopped
- 2 large carrots sliced
- 2 cloves garlic, minced
- 2 cans (14 oz each) vegetable broth
- 2 cups cut up skinned potatoes
- 1/2 cup dried lentils
- 1 bay leaf
- 2 tsp. dried oregano, crushed or 1 tbsp. chopped fresh oregano
- 2 cups coarsely chopped broccoli
Directions
- Spray sauce pot with vegetable cooking spray. Add sausage and cook until browned.
- Add onion, carrots and garlic and cook until tender.
- Add broth, potatoes, lentils, bay leaf and oregano. Heat to a boil. Cover and cook over low heat 40 minutes or until lentils are done.
- Stir in broccoli and cook 5 minutes. Remove bay leaf and serve.
