Savory sausage & rice skillet Recipe

A great one dish meal which made better with better sausage. Don't be afraid to spice it up by using hot italian sausage in place of sweet sausage.

Ingredients

  • 1 lb. italian sweet sausage, cut into 1 inch pieces
  • 1 cup sliced celery
  • 1 large onion, chopped
  • 1 medium green pepper, cut into 2 inch long strips
  • 1 medium sweet red pepper, cut into 2 inch long strips
  • 3 cloves garlic, minced
  • 1 tsp. dried thyme, crushed or 1 tbsp. chopped fresh thyme
  • 1 cup uncooked regular brown rice
  • 1/2 cup uncooked wild rice
  • 2 cans (14oz) chicken broth (3 1/2 cups)
  • 2 tbsp. chopped fresh parsley.

Directions

  1. Cook sausage in a large nonstick skillet until browned. Add celery, onion, peppers, garlic and thyme and cook until vegetables are tender.
  2. Add brown rice, wild rice, and broth. Heat to a boil. Cover and cook over low heat 45 minutes or until rice is done. Stir in parsley. Serve.
