Bay Scallop Pesto Recipe

This blend of scallops, mushrooms, bell pepper and fettuccine makes a delicious meal the whole family can enjoy.

Ingredients

  • 1 lb. bay scallops
  • 1 tbsp. olive oil
  • 1 1/2 cups sliced mushrooms
  • 1 small red bell pepper, seeded & chopped
  • 1 1/2 cups chicken broth or stock
  • 1/2 cup jarred pesto sauce
  • 1/4 cup grated parmesan cheese
  • 1/4 cup toasted pine nuts
  • 8 oz fettuccine, cooked and drained
  • 1 tbsp. grated lemon peel

Directions

  1. In 12 inch nonstick skillet over medium heat, saute scallops in olive oil until golden. Remove skillet from heat, set scallops aside and keep warm. Add mushrooms & bell pepper to skillet and saute until mushrooms are browned. Add chicken broth & stir in pesto sauce. Return scallops to skillet. Stir in parmesan and pine nuts.
  2. Blend fettuccine and lemon peel. Arrange on serving platter. Top with scallop mixture.
  3. If desired, provide additional parmesan cheese to be added when serving.
