Swordfish Steaks with Olives & Capers Recipe

This combination of swordfish, olives and capers creates a wonderful entree for that special occasion, or to just add variety to your meal.

Ingredients

  • 1/2 cup flour
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 4 (6oz) swordfish steaks, cut 3/4 inch thick
  • 1/4 cup olive oil
  • 1 chopped onion
  • 2/3 cup pitted Spanish green olives, quartered lengthwise
  • 1/4 cup golden raisins
  • 2 tbsp capers, drained
  • 2 tbsp. white wine vinegar
  • 2 tbsp. chopped fresh mint

Directions

  1. Combine flour, salt and pepper. Coat fish in seasoned flour.
  2. Cook in oil until brown, 2 minutes a side. Transfer fish to a plate. Reduce heat.
  3. Cook onion until golden. Add olives, raisins, and capers. Cook on low for 2 minutes. Add fish and onion mixture. Add vinegar and mint. Cook 2 minutes more or until fish flakes with a fork.
  4. Serves 4
