Swordfish Steaks with Olives & Capers Recipe
This combination of swordfish, olives and capers creates a wonderful entree for that special occasion, or to just add variety to your meal.

Ingredients
- 1/2 cup flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 (6oz) swordfish steaks, cut 3/4 inch thick
- 1/4 cup olive oil
- 1 chopped onion
- 2/3 cup pitted Spanish green olives, quartered lengthwise
- 1/4 cup golden raisins
- 2 tbsp capers, drained
- 2 tbsp. white wine vinegar
- 2 tbsp. chopped fresh mint
Directions
- Combine flour, salt and pepper. Coat fish in seasoned flour.
- Cook in oil until brown, 2 minutes a side. Transfer fish to a plate. Reduce heat.
- Cook onion until golden. Add olives, raisins, and capers. Cook on low for 2 minutes. Add fish and onion mixture. Add vinegar and mint. Cook 2 minutes more or until fish flakes with a fork.
- Serves 4
