Haddock Creole Recipe

This recipe is a must try for fish lovers! With it's delicious blend of tomato, green pepper and onion, your family is sure to love it.

Ingredients

  • 2 tbsp. olive oil
  • 1 small green pepper, coarsely chopped
  • 1 small onion, halved and sliced
  • 1 cup sliced celery
  • 1 large clove garlic, minced
  • 1 (14 1/2 oz) can diced tomatoes, undrained
  • 2 tbsp. tomato paste
  • 3 to 4 drops hot pepper sauce
  • 2 tbsp. capers
  • 1/4 tsp. crushed dried basil
  • 4 (6 oz.) haddock fillets
  • hot cooked parsley rice

Directions

  1. Preheat oven to 450 degrees
  2. In large saucepan, heat olive oil over medium heat. Add green pepper, onion, celery, garlic and tomatoes, cook, stirring occasionally until vegetables are just tender, about 10 minutes, Stir in tomato paste, hot pepper sauce, capers and basil, simmer 2 minutes to blend flavors.
  3. Arrange haddock in buttered baking dish. Top with tomato mixture. Bake for 10 minutes or until fish flakes with a fork. Carefully transfer to serving platter, using wide spatula or fish server.
  4. Serves 4
  5. Note: If desired, blend 1/4 cup shredded cheddar cheese and 1/4 cup fresh or dried bread crumbs and sprinkle over haddock for last 5 minutes of baking.
