Corn Muffin - Ham Appetizer Recipe
Ham, cranberry-orange relish and more, dress up this corn muffin to make a delicious appetizer that is sure to please your family or guests.

Ingredients
- 1 (6 1/2 oz) pkg. cornbread mix
- 2 tbsp. Dijon-style mustard
- 1 1/2 tsp. chopped fresh thyme or 1/2 tsp. dried thyme, crushed
- 1/4 tsp. coarsely ground pepper
- 1/2 cup cranberry-orange relish
- 2 tbsp. finely chopped fresh jalapeno pepper
- 6 oz thinly sliced ham
Directions
- Preheat oven to 400 degrees. Grease 24 1 3/4-inch muffin cups. Set aside
- Prepare cornbread mix according to pkg directions, except stir in mustard, thyme, and pepper. Spoon into prepared muffin cups, filling each two-thirds full. Bake 8 to 9 minutes or until golden. Cool in muffin cups for 5 minutes. Remove from cups, cool completely.
- Meanwhile, in a small mixing bowl stir together relish and jalapeno pepper. Cut ham into 1 1/2- inch pieces.
- Just before serving, split muffins horizontally in half. Top bottoms of muffins with about 1 teaspoon cranberry mixture and some ham. Replace muffin tops.
