Avocado Vegetable Salsa Recipe
This is a great recipe for a delicious and unique salsa, great for tortilla chips or your chip of preference. Great for a party or anytime your chips need a little extra something.
Ingredients
- 2 large tomatoes, peeled, seeded, and diced
- 1 yellow bell pepper, seeded and diced
- 1 cup frozen whole kernel corn, thawed
- 1 jalapeno pepper, seeded and chopped
- 2 tbsp. chopped fresh cilantro
- 2 tbsp. lime juice
- 1 avocado, seeded and chopped
Directions
- In a medium bowl combine all ingredients except avocado. Cover and refrigerate up to 24 hours.
- Just before serving, stir avocado into tomato mixture. Transfer to serving bowl. Salsa goes well with tortilla chips or on broiled chicken.
