Avocado Vegetable Salsa Recipe

This is a great recipe for a delicious and unique salsa, great for tortilla chips or your chip of preference. Great for a party or anytime your chips need a little extra something.

Ingredients

  • 2 large tomatoes, peeled, seeded, and diced
  • 1 yellow bell pepper, seeded and diced
  • 1 cup frozen whole kernel corn, thawed
  • 1 jalapeno pepper, seeded and chopped
  • 2 tbsp. chopped fresh cilantro
  • 2 tbsp. lime juice
  • 1 avocado, seeded and chopped

Directions

  1. In a medium bowl combine all ingredients except avocado. Cover and refrigerate up to 24 hours.
  2. Just before serving, stir avocado into tomato mixture. Transfer to serving bowl. Salsa goes well with tortilla chips or on broiled chicken.
  3. Serves 6
