Roasted Portobellos and goat cheese Recipe
This is a delicious recipe for mushrooms. A combination of pasta sauce, cheese, onions, and more, make this a wonderful addition to your meal.

Ingredients
- 1 cup pasta sauce
- 4 large portobello mushrooms (4-inch diameter)
- 1/3 cup cream cheese spread
- 1 oz goat cheese or feta cheese, crumbled
- 1/2 small red onion, chopped
- 1 tbsp. lemon juice
- 1 tbsp. chopped fresh oregano
- 2 tbsp. finely chopped black olives (optional)
Directions
- Preheat oven to 400 degrees. Pour pasta sauce into a large shallow baking dish.
- Clean portobello mushrooms with a damp cloth, remove stem and place gill side up in pasta sauce.
- In small bowl combine cheese, onion, lemon juice, oregano and olives, if using. Season to taste with pepper.
- Fill mushroom caps with cheese mixture. Bake 20 minutes or until mushrooms are tender and cheese mixture is hot.
- Serves 4
