Marinated Stuffed Shrimp Recipe

These marinated stuffed shrimp appetizers are sure to please your guests. With shrimp, garlic, cheese and more these taste great!

Ingredients

  • 2 tbsp. olive oil
  • 1 lb. large fresh shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 (8-oz) round smoked Gouda cheese
  • 4 oz. prosciutto or deli-cooked ham, very thinly sliced
  • 1/2 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 2 tbsp. chopped fresh rosemary leaves
  • 1/8 tsp. ground red pepper or cayenne
  • Lettuce leaves (optional)

Directions

  1. Heat 2 tablespoons olive oil over medium-high heat in large skillet. Saute shrimp, garlic, salt and freshly ground black pepper to taste in hot oil 3 minutes or until shrimp turn pink; cool.
  2. Cut cheese into 1-inch cubes. Cut prosciutto into thin strips. Wrap cheese cubes with ham strips; wrap shrimp around cubes, securing with wooden toothpicks. Cover and chill 10 minutes.
  3. Whisk 1/2 cup oil, balsamic vinegar, rosemary and red pepper in large bowl; add shrimp and toss. Cover and chill 10 minutes more.
  4. Remove shrimp from marinade; discard marinade.Place shrimp on a lettuce-lined serving platter, if desired
  5. desired.
