Vegetable Stuffing Recipe

Does your stuffing need a little dressing up? Try this delicious recipe! With mushrooms, onions, water chestnuts and more you are sure to please your family at meal time.

Ingredients

  • 2 tbsp. butter or margarine
  • 2 cups cut up fresh mushrooms
  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 1 can (14 oz.) vegetable broth
  • 1 can (8 oz.) sliced water chestnuts, drained
  • 2 cups coarsely chopped fresh spinach
  • 4 cups stuffing (your favorite brand)

Directions

  1. Heat butter in saucepot. Add mushrooms, onion and carrots and cook until tender.
  2. Add broth, water chestnuts and spinach. Heat to a boil. Stir in stuffing. Mix lightly.
  3. Serves 8
