Vegetable Beef Soup Recipe

Easy to make, pretty good tasting vegetable soup here!

Ingredients

  • 1 1/2 lb. ground beef
  • 1/3 cup dried minced onion
  • 1 can (46 oz.) tomato juice
  • 1 package (20 oz.) frozen mixed vegetables, thawed
  • 2 beef bouillon cubes
  • 1 t. sugar
  • 1/2 t. pepper

Directions

  1. In a Dutch oven or soup kettle, brown beef and onion; drain.
  2. Add remaining ingredients; bring to a boil. Reduce heat and simmer for 20 minutes or until the vegetables are tender.
  3. Makes 8-10 (2 1/2 quarts) servings.
