Salt Crusted Mini Potatoes Recipe
A perfect addition to a family meal. Our kids especially like these if we substitute small red-skinned potatoes. They are better whole, but if the potatoes are too large you may need to cut them in halves (smaller if needed). You can also go lighter on the salt if desired.

Ingredients
- 20 mini white potatoes (about a pound and a half)
- Extra-virgin olive oil
- 2 T Sea Salt (or coarse salt)
Directions
- Preheat oven to 350 degrees. Clean and dry potatoes with a towel. Whole potatoes will need to be pricked with a fork if large
- Roll potatoes in a shallow plate of olive oil until covered.
- In another small shallow plate, roll potatos in coarse salt
- Place potatoes on a lightly greased baking sheet and bake 35 to 45 minutes or until done.
- Remove from oven and serve.
