Peanut Butter and Banana Goo Goo Sandwich Recipe

A twist on the classic peanut butter and banana sandwich. You may find it easiest to eat this treat with a a fork and knife.

Ingredients

  • 2 slices whole wheat or white bread
  • 1 teaspoon flaxseed (optional)
  • 2 tablespoons peanut butter
  • 1, 7-8 inch banana

Directions

  1. Toast two pieces of bread in a toaster until golden brown.
  2. Mash a 7-8 inch banana in a cup or bowl until a pudding like consistency comes to place.
  3. (optional) Add a teaspoon of flaxseed to the banana pudding for an extra touch of nutty flavour and some healthy omega 3's and stir.
  4. Apply 1 tablespoon peanut butter to each piece of toast.
  5. Pour and spread 1/4 the pudding on one piece of toast and 1/4 the pudding on the other. (only use half of the pudding)
  6. Place two slices of toast with peanut butter and pudding directly on each on other like a traditional sandwich.
  7. Place the sandwich in the center of a plate and pour the remaining pudding mixture on the top of the sandwich.
  8. Serves 1, eat and enjoy with a knife and fork.
