Marinated Mushrooms Recipe

I like to prepare meatless appetizers so my guests don't get too full before dinner is served.

Ingredients

  • 1 pound fresh mushrooms
  • 6 tablespoons olive oil
  • 3/4 cup dry white wine
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons chopped onion
  • 3 tablespoons lemon juice

Directions

  1. Place mushrooms in a glass or earthenware bowl.
  2. Combine remaining ingredients in a saucepan and simmer for 15 minutes.
  3. Remove from heat and pour over mushrooms. Cover and refrigerate for several hours or overnight.
