Spinach and Cheese Squares Recipe

Easy to make breakfast casserole recipe.

Ingredients

  • 2 10oz frozen spinach packages, thawed and drained
  • 1 lb small curd cottage cheese
  • 1/3 C feta cheese
  • 1/4 C chopped onion
  • 8 oz egg substitute
  • 3 T margarine
  • 2 T grated parmesan cheese
  • 1 T flour
  • 1/2 t white pepper
  • 1/2 t dill

Directions

  1. In a large bowl mix cottage cheese, feta, onion and egg substitute.
  2. Add melted margarine, flour, pepper, and dill. Mix lightly.
  3. Fold in spinach (for best results remove as mouch liquid from spinach as possible beforehand).
  4. Spread mix evenly into a greased 9x9 dish, sprinkle parmesan cheese on top and bake in a preheated oven at 350F for about 50 minutes.
  5. Allow to cool and cut into squares.
