Yellow Squash Casserole Recipe

Squash casseroles are usually very simple to make, and this is no exception. Frash from the garden squash make this even better

Ingredients

  • 2 C well drained and cooked yellow squash
  • 3 beaten eggs (lg.)
  • 1 T minced onion
  • 1/2 C med.-sharp Cheddar cheese, grated
  • 1/2 t salt
  • 1/2 C buttered bread crumbs

Directions

  1. Mix all ingredients, except bread crumbs.
  2. Pour into baking dish and top with buttered bread crumbs. Bake at 350 degrees for 45 minutes or until firm.
