Triple Cheesy Green Chile Squares Recipe

A great appetizer with a little kick!

Ingredients

  • 4 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 tablespoon butter or margarine, melted
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cream-style cottage cheese
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey jack cheese
  • 1 (4 ounce) can diced green chiles, drained
  • Pimento strips (optional)

Directions

  1. Combine first 6 ingredients; mix until smooth. Stir in all cheese and chiles; pour into a greased 8-inch square baking dish. Bake at 350 degrees F for 30 minutes. Let stand 10 minutes; cut into squares. Garnish with pimento strips if desired.
  2. Yields about 36 appetizer servings.
