Salmon Baked Potatos Recipe

A tasty twist on a classic twice baked potato recipe. Even our kids like this recipe!

Ingredients

  • 1 can salmon, drained
  • 4 baking potatoes, cleaned
  • 1/2 c. milk
  • 1/4 c. margarine
  • 1/2 c. parmesan cheese, grated
  • 1/4 c. green onion, minced
  • 1 tsp. thyme
  • 1 tsp. dill
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 c. frozen peas, thawed

Directions

  1. Bake potatoes. When cool, cut in half and scoop out centers.
  2. Mash potatoes and beat in cheese, onion and spices.
  3. Stir in salmon and peas.
  4. Spoon mixture back into hollowed out skins. Bake at 350 degrees for 20 minutes.
