Oatmeal Muffins Recipe

Oatmeal Muffins make a great, filling breakfast.

Ingredients

  • 1 cup quick-cooking rolled oats
  • 1 cup buttermilk
  • 1/2 cup brown sugar, packed
  • 1 large egg, beaten
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup melted butter, cooled

Directions

  1. Soak oatmeal in buttermilk about 30 minutes. Add sugar, egg, flour, salt, baking powder and baking soda. Add melted butter. Spoon batter into greased muffin cups, filling each 2/3 full. Bake at 400 degrees F for 25 to 30 minutes.
  2. Yields 12 large or 18 small muffins.
