Pop Over Muffins Recipe

This quick and easy recipe yields a dozen muffins in no time at all.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 1/2 cup milk
  • 1/4 cup butter flavored shortening, melted

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large mixing bowl stir together the flour, sugar, baking powder and salt. Make a well in the center.
  3. In a medium mixing bowl combine the eggs, milk and melted shortening. Add all at once to the flour mixture. Stir with a fork until the dry ingredients are just moistened.
  4. Grease 12 muffin cups. Fill until almost full. Bake for 15 minutes or until muffins are golden. Remove from pan.
  5. Makes 1 dozen.
