Banana Crumb Muffins Recipe

These banana muffins with a crumb topping are a sweet treat for breakfast.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 large ripe bananas, mashed
  • 3/4 cup granulated sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter or margarine, melted

Directions

  1. Topping
    1/3 cup packed brown sugar
    1 tablespoon all-purpose flour
    1/8 teaspoon ground cinnamon
    1 tablespoon butter or margarine
  2. In a large bowl, combine dry ingredients.
  3. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper lined muffin pan.
  4. Combine topping ingredients; sprinkle over muffins. Bake at 375 degrees F for 20-25 minutes or until muffins test done. Cool 10 minutes before removing to a wire rack.
  5. Yield: about 10 muffins.
