Morning Glory Muffins Recipe
These are muffins made with cinnamon, cloves, ginger, nutmeg and mace, and a mixture of coconut, shredded carrots, raisins, apple, and pecans.

Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 1 tablespoon cinnamon
- 1/4 heaping teaspoon each of cloves, ginger, nutmeg, mace and salt
- 1 cup dark brown sugar
- 3/4 cup granulated sugar
Directions
- Mix these ingredients together. Add:
- 1 cup coconut
2 cups shredded carrots
1/2 cup raisins
1 chopped apple
1/2 cup chopped pecans - Beat 3 eggs with 1 cup oil and 1 tablespoon vanilla extract.
- Add the egg mixture to the dry ingredients.
- This recipe makes 12 muffins using the oversized tins or 24 smaller ones bake in a 375 degree F oven for about 30 to 45 minutes.
