Raspberry Bran Muffins Recipe

This is a recipe for rasberry bran muffins which uses bran flakes cereal and raspberry jam.

Ingredients

  • 1 1/4 cups flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 egg
  • 4 cups bran flakes cereal
  • 1/4 cup raspberry jam

Directions

  1. Preheat the oven to 350 degrees F. Line the muffin tins with paper muffin cups.
  2. Combine the first 5 ingredients in a medium bowl. Whisk the buttermilk, oil and egg in a large bowl to blend. Add the dry ingredients and cereal and stir until just blended. Spoon 1/4 cup batter into each muffin cup. Using a small spoon, make a well in the center of each and fill with 1 teaspoon of jam. Spoon the remaining batter over. Bake until wooden pick inserted into centers comes out clean, about 25 minutes.
  3. Turn muffins out onto racks. Cool slightly.
