Eggnog Muffins Recipe
Serve these Eggnog Muffins on Christmas day or afterwards to use up your leftover eggnog.

Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup eggnog
- 1/4 cup water
- 1/3 cup butter, melted
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon nutmeg
Directions
- Preheat oven to 400 degrees F.
- Combine flour, sugar, baking powder and salt in a large mixing bowl.
- In another bowl, combine remaining ingredients. Add liquid to dry ingredients and mix until just moistened. Pour batter in lined or greased muffin cups and bake for 20 minutes.
- Makes 12 large muffins.
