Pecan Pie Muffins Recipe

Ingredients
- 1 cup chopped pecans
- 1 cup firmly packed brown sugar
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup butter or margarine, melted
Directions
- Preheat oven to 350 degrees F. Grease 9 muffin pans or line with paper or foil muffin cups and coat with vegetable spray.
- In a mixing bowl, combine pecans, brown sugar and flour.
- In a separate bowl, beat eggs until foamy; stir in butter. Pour egg-butter mixture over dry mixture and stir until just moistened. Fill muffin cups 2/3 full with batter. Bake 20 to 25 minutes. Cool on wire racks.
