Charleston Philpy Recipe

These rice biscuits are delicious with butter.

Ingredients

  • 1/2 cup milk
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup soft, cooked rice
  • 2 teaspoons melted butter
  • 1 egg, well beaten

Directions

  1. Add milk slowly to flour and salt, beating to avoid lumping.
  2. Mash rice until fairly smooth. Combine with flour mixture; add butter and egg; bake in a greased layer cake tin at 450 degrees F for 30 minutes.
  3. When done, split open and butter generously.
