Tamale Pie and Spoon Bread Recipe

Tamale Casserole with Spoon bread topping, fit for a King. Add a salad and that's all you need for a delicious meal

Ingredients

  • 1/4 cup olive oil
  • 1 1/2 lbs ground beef
  • 1 cup chopped onion
  • 1 clove garlic minced
  • 1/2 cup chopped green pepper
  • 1 #2 can tomatoes
  • 1 12 oz can whole kernel corn'1 tsp salt
  • 1 1/2 tsp chili powder
  • 1/4 tsp black pepper
  • 1/2 cup cornmeal
  • 1 cup water
  • 1 cup ripe olive (leave whole)
  • Topping: 1 1/2 cups milk
  • 1 tsp salt
  • 2 T oleo
  • 1/2 cup corn meal
  • 1 cup grated cheddar cheeze
  • 2 whole eggs slightly beaten

Directions

  1. Brown first five ingredients, add tomatoes and corn and spices.
  2. Add cornmeal mixed with water and bring to boil til thickened..add olives
  3. Pour into greased 13x9 casserole dish
  4. Topping: bring milk to simmer, add cornmeal while whisking to prevent lumps. add salt and oleo. Remove from heat and add cheese and eggs stiring constantly until cheese is melted and mixture is smooth. Pour on top of casserole, bake 375 degrees for about 1 hour until brown on top..
