Grilled Chicken with Pepperjack Cheese Recipe

This grilled chicken breast is topped with pico de gallo and pepperjack cheese. It's a perfect entree for a summer BBQ.

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 cups pico de gallo
  • 4 slices pepperjack cheese
  • 2 T olive oil
  • salt and pepper
  • chicken rub:
  • 1/2 teaspoon of each
  • chili powder
  • garlic powder
  • paprika
  • ground cumin
  • ground coriander
  • ground oregano
  • ground chipolte
  • mix well together

Directions

  1. wash and pat dry chicken
  2. sprinkle with salt and pepper
  3. brush with olive oil
  4. spinkle with chicken rub mixture
  5. grill until tender but juicy
  6. let chicken cool just slightly enough that you can cut it in half length wise
  7. top each half with 1/2 cup pico de gallo and 1 slice of pepperjack cheese
  8. you can put this back on the grill until the cheese melts or pop in microwave for a few seconds.
  9. do not overcook you only want to melt the cheese
  10. serve with black beans and saffron rice
  11. serves 2-4 depending on your appetite
