Mexican Lasagna Recipe
An international twist on a favorite! Mexican Lasagna is inexpensive to make. It's even better the next day, which is perfect for this college student on a tight budget!

Ingredients
- 1 lb. ground turkey
- 1 can campbell's nacho cheese soup
- 1 can cream of chicken soup
- 1 can of mexican style rotel tomatoes
- 6 fajita size flour tortillas
- 16 oz package of mexican cheese blend
- hot sauce
Directions
- * preheat oven to 350 degrees
- 1) brown ground turkey-when partially cooked, i like to add the juice from the rotel tomatoes and 6 counts of hot sauce.
- 2) in a large bowl, combine soups and tomatoes.
- 3) mix ground turkey into the soup and tomato mixture
- 4)grease a 13x9 in. baking dish
- 5) tear tortillas in half and arrange them in the bottom of the baking dish
- 6) spoon the filling over the tortillas
- 7) sprinkle the filling with cheese
- 8) repeat the layering process 2 more times
- 9) finish the top with a layer of tortillas and the remaining cheese
- 10) bake uncovered for 30 minutes, until cheese is melted and bubbly
- 11) remove from oven and allow to cool and set (approx 15-20 min.)
