Mexican Lasagna Recipe

An international twist on a favorite! Mexican Lasagna is inexpensive to make. It's even better the next day, which is perfect for this college student on a tight budget!

Ingredients

  • 1 lb. ground turkey
  • 1 can campbell's nacho cheese soup
  • 1 can cream of chicken soup
  • 1 can of mexican style rotel tomatoes
  • 6 fajita size flour tortillas
  • 16 oz package of mexican cheese blend
  • hot sauce

Directions

  1. * preheat oven to 350 degrees
  2. 1) brown ground turkey-when partially cooked, i like to add the juice from the rotel tomatoes and 6 counts of hot sauce.
  3. 2) in a large bowl, combine soups and tomatoes.
  4. 3) mix ground turkey into the soup and tomato mixture
  5. 4)grease a 13x9 in. baking dish
  6. 5) tear tortillas in half and arrange them in the bottom of the baking dish
  7. 6) spoon the filling over the tortillas
  8. 7) sprinkle the filling with cheese
  9. 8) repeat the layering process 2 more times
  10. 9) finish the top with a layer of tortillas and the remaining cheese
  11. 10) bake uncovered for 30 minutes, until cheese is melted and bubbly
  12. 11) remove from oven and allow to cool and set (approx 15-20 min.)
