Hot German Potato Salad Recipe

My grandma used to make this potato salad with sauerkraut.

Ingredients

  • 5 medium red potatoes
  • 6 slices of bacon
  • ½ cup medium onion, chopped
  • 1 cup Silver Floss® or Krrrrisp Kraut® Sauerkraut, drained
  • 1/4 cup water
  • ½ cup apple cider vinegar
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 2 Tbsp. parsley, chopped

Directions

  1. In a large pot, boil potatoes until tender. Drain and cool. Peel potatoes and cut into large diced pieces. In a 10-inch frying pan, cook bacon until crisp. Drain bacon on paper towels, reserving drippings. Cut bacon into ½-inch pieces. Saute onions in the bacon fat until translucent. Add water and vinegar to deglaze the pan. Bring to a boil. Stir in Sauerkraut, potatoes, and chopped bacon. Season with salt and pepper. Heat through. Remove from heat and stir in parsley. Serve immediately.
