Harvest Sweet Potato Soup Recipe

Great soup for the fall, halloween, and thanksgiving seasons

Ingredients

  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 1 T vegetable oil
  • 3 med. sweet potatoes (about 1 lb.) - peeled and cubed
  • 3 cups chicken broth
  • 1 bay leaf
  • 1/2 t dried basil
  • 1/4 t salt, optional

Directions

  1. In a Dutch oven or soup kettle, sauté celery and onion in oil until tender
  2. Add remaining ingredients; bring to a boil over medium heat. Reduce heat; simmer for 25-30 minutes or until tender
  3. Discard bay leaf. Cool slightly. In a blender or food processor, process soup in batches until smooth
  4. Return all to pan and heat through. Makes 4 servings
